An easy and delicious vegetable soup for Fall


Nothing soothes the soul on a chilly night like a hot soup and this one is just right for those that will soon be upon us. If you can boil water, you can make this one. This one is a Norman family favorite.

Mushroom Barley Soup


10 oz fresh white mushrooms, sliced

2 carrots, diced

2 ribs celery, diced

1/2 cup medium barley

1/4 - 1/2 cup dried lima beans (depending on preference)

8 cups water

3 large cubes vegetable, mushroom or chicken bullion

1 medium onion, diced


Bring water to a boil.

Add remaining ingredients to pot and cook for 2 hours, stirring occasionally.

Serves four.
