Grandma’s zucchini bread
3 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon baking powder
3 teaspoons (1 tablespoon) cinnamon
3 eggs
1 cup vegetable oil
2 cups sugar
1-1/2 teaspoons vanilla
2 cups grated zucchini
Grease and flour two 8 × 4-inch pans. Preheat oven to 350 degrees.
Sift flour, salt, baking powder, baking soda and cinnamon together.
Beat eggs, oil, vanilla and sugar in a large bowl. Add dry ingredients to wet mixture, and beat well.
Stir in zucchini and combine.
Bake 40-60 minutes or until tester comes out clean.
